The secret to life balance is waking up early.Because then you can meet up with friends and get in some exercise and not be stressed by traffic and see the sunrise and have a heads up on the weather before anyone else does.
Leah and I were supposed to run three or four miles but we got caught up talking and it ended up being closer to five. I love/hate when that happens 🙂
I had to zoom back to the other side of town in time to join Anthony for a bit of CrossFit.It was a pretty busy morning but I feel so ready to embrace the rest of the day! I’ve never been one to roll out of bed and go straight to work. Even in high school I would study and do chores before going to class. I will never be a night owl though I did see these cookie jars at Anthropologie while in Baltimore and fell in love:
One day when I have a kitchen with space and time to whip up chocolate chip cookies all the time, this will be mine! 🙂
In the meantime I am whipping up chicken posole. I recently realized that a crock pot is the cure to weeknight cooking when you’re on the go, and this recipe definitely fits the bill for quick (in terms of preparation) and easy! I tweaked the recipe by using chicken breasts instead of thighs, adding about a cup of chopped red and orange peppers, adding a can of chickpeas, and adding some cayenne pepper for extra spice. Topped with a dallop of greek yogurt and avocado to make everything extra divine.
I didn’t really know what hominy was other than it came from corn somehow. Apparently hominy is corn that’s soaked in lye or lime until the kernels’ shells come off and they puff up to about twice their size. And, according to Livestrong, hominy is pretty good for you compared to other grains.
